What officers usually ask to see

Why the pack fails at 11pm
Paper is legal. It collapses when opening checks, temps, and deliveries are written up from memory at close, left in the office, or cannot be read. The checklist makes that gap visible before someone in a hi-vis asks for Thursday.
Digital records on the day
